This vibrant Thai-inspired curry brings together protein-rich tofu, colourful vegetables, and a creamy coconut-lime sauce for a nourishing meal that’s as good for your skin as it is for your taste buds. Served over gently warmed courgette noodles, it’s a light yet satisfying dish packed with antioxidants, essential fatty acids, and minerals that promote a healthy, radiant complexion.
• 2 tbsp toasted sesame oil
•1 block (400 g) extra-firm tofu, cut into 1.5 cm cubes
•1 can (400 ml) coconut milk
•2 tbsp red curry paste
•1 tbsp freshly squeezed lime juice
•2 garlic cloves, finely grated
•½ tsp sea salt
•1 tbsp avocado oil
•225 g sliced mushrooms
•1 bunch spring onions, cut into 2.5 cm pieces
•6 cups (roughly 150 g) chopped kale
•600 g courgette noodles (spiralised courgettes)
• Prepare the tofu:
Heat the sesame oil in a large non-stick frying pan over a medium-high heat. Pat the tofu dry and add to the pan in a single layer. Cook without stirring for around 4 minutes until golden, then gently turn and cook for another 3–4 minutes until evenly crisp. Transfer to a plate.
• Make the sauce:
In a small bowl, whisk together the coconut milk, curry paste, lime juice, garlic, and salt until smooth.
• Cook the vegetables:
Add the avocado oil to the same pan, then sauté the mushrooms and spring onions for about 5 minutes until softened and lightly browned. Stir in the kale, sauce, and tofu. Cook for a further 2 minutes until the kale is wilted and everything is coated in the sauce.
• Warm the noodles:
Add the courgette noodles to the pan and toss gently for about 1 minute, just until warmed through.
• Serve:
Divide the courgette noodles between bowls and spoon the curry over the top. Serve immediately with a squeeze of extra lime, if desired.
