It’s a delicious way to treat your skin while satisfying sweet cravings.
• 1½ cups dates, roughly chopped and soaked in boiling water for 20 minutes, then drained
• 1¼ cups mixed nuts (almonds and walnuts are ideal), coarsely chopped
• ⅓ cup desiccated coconut
• ½ cup mixed seeds (pumpkin, sunflower, sesame)
• ¼ cup ground almonds
• 2 tablespoons almond or peanut butter
• ¼ cup dark or milk chocolate chips
• Preheat the oven to 170°C. Spread the nuts on a lined baking tray and toast for 5–6 minutes until lightly golden.
• Add the seeds and coconut to the tray and return to the oven for a further 2–3 minutes, keeping a close eye to prevent burning.
• Place the drained dates and nut butter into a food processor and blend until a thick, sticky paste forms.
• Transfer the date mixture to a bowl and fold through the toasted nuts, seeds, coconut, ground almonds, and chocolate chips until well combined.
• Press the mixture firmly into a lined slice tin or roll into bite-sized balls.
• Refrigerate for at least 1 hour, or until set, before slicing or serving.
