These rich, melt in your mouth chocolate truffles are easy to make and perfect for gifting or a little sweet treat. Made with a delicious ingredients, they also offer a few skin loving perks thanks to their antioxidant and healthy fat content.
• 285 g dark chocolate (melts, chips or finely chopped block)
• 2 tbsp unsalted butter
• ½ cup full-fat cream
Coating options (enough for approx. 24 truffles – choose one or mix and match):
• Desiccated coconut
• Unsweetened cocoa powder (Dutch-processed for a deeper colour)
• Finely crushed peanuts
• Sprinkles
• Icing sugar
Add the chocolate, cream and butter to a microwave safe bowl. Heat in 30 second intervals, stirring between each burst, until the mixture is warm. Cover and allow to stand for five minutes, then stir until smooth and glossy, this creates a classic ganache.
Refrigerate the ganache for around six hours, until firm but scoopable (similar to softened butter). Chill a plate or tray at the same time.
To shape the truffles, place your chosen coating on a plate. Scoop tablespoons of the ganache, roll gently between cool hands and place onto the chilled tray. Once all truffles are rolled, coat them evenly and allow them to come to room temperature before serving for a soft, creamy centre.
