This nutrient-rich bowl is packed with antioxidants, healthy fats, and skin-supportive ingredients to nourish you from the inside out. It’s vibrant, satisfying, and designed to support hydration, collagen production, and a healthy glow.
Serves 2.
Ingredients – Roasted Veg
1 sweet potato, cubed (rich in beta-carotene to support skin renewal)
1 red pepper, sliced (vitamin C for collagen support)
½ head of cauliflower, cut into florets (anti-inflammatory and fibre-rich)
1 tbsp mild curry powder (anti-inflammatory properties)
1 tsp smoked paprika (contains skin-protective antioxidants)
½ tsp ground turmeric (a natural anti-inflammatory)
Extra virgin olive oil, for roasting (rich in healthy fats)
Sea salt and black pepper, to taste
For the coconut yoghurt dressing
4 tbsp plain coconut yoghurt (soothing, dairy-free base rich in healthy fats)
1 garlic clove, crushed (natural antibacterial and immune-boosting)
Juice of ½ a lemon (vitamin C brightens skin and supports detoxification)
A small handful of fresh coriander, finely chopped (antioxidant-rich and detoxifying)
Sea salt and black pepper, to taste
To serve
1 ripe avocado, sliced (loaded with skin-nourishing healthy fats and vitamin E)
100g cooked quinoa (a complete protein and source of zinc for skin healing)
A few handfuls of fresh greens – kale, spinach or rocket work beautifully (support detox and skin clarity)
A sprinkle of pomegranate seeds (rich in polyphenols and vitamin C)
A sprinkle of sesame seeds (source of zinc, selenium and healthy fats)
Method
Preheat the oven to 180°C.
Place the sweet potato on a baking tray, drizzle with olive oil and sprinkle with curry powder, smoked paprika, turmeric, salt and pepper. Toss well to coat. Roast for 20 minutes.
After 20 minutes, add the cauliflower and red pepper to the tray. Toss everything together and return to the oven for another 15–20 minutes, or until golden and tender.
While the vegetables roast, prepare the dressing by mixing the coconut yoghurt, garlic, lemon juice, coriander, salt and pepper until smooth.
To serve, layer the quinoa, fresh greens, roasted vegetables, sliced avocado, pomegranate seeds, and sesame seeds in bowls. Drizzle generously with the coconut dressing.
