This vibrant, feel good salad is as nourishing for your skin as it is for your body. Packed with colourful, whole food ingredients, it delivers a powerful dose of vitamins, antioxidants and healthy fats that support skin hydration, renewal and glow from within. Perfect as a light lunch or a nourishing side, this is beauty food made simple - fresh, satisfying and effortlessly delicious.
• 2 roasted sweet potatoes (orange kumara), cut into chunks
• Creamy tahini dressing (prepared separately)
• 4 cups fresh rocket
• ⅓ cup crumbled feta
• 1 ripe avocado, sliced
• Fresh lemon wedge
• 3 tablespoons toasted pumpkin seeds
• Sea salt and freshly cracked black pepper
Begin by roasting the sweet potatoes (orange kumara) until tender and lightly caramelised. While they cook, prepare the tahini dressing until smooth and pourable.
Arrange the rocket on a serving platter or in a large bowl. Spoon over a little dressing, then layer on the warm roasted sweet potatoes (orange kumara) and sprinkle with feta. Add the avocado slices and gently squeeze fresh lemon juice over them to keep their colour vibrant.
Finish with an extra drizzle of dressing, scatter over the toasted sunflower seeds, and season with salt and pepper. Serve immediately while the sweet potatoes are still warm.
